Here's a recipe for Home-Style Masala Kulcha:
Ingredients:
For the dough:
2 cups all-purpose flour (maida)
1 teaspoon baking powder
2pcs egg
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup yogurt (dahi)
1/4 cup milk
2 tablespoons oil
For the masala filling:
2 medium-sized potatoes, boiled and mashed
1.5gm beans small size cutting
100qm Cottage cheese
1.5gm. Carrot small size grated
1 small onion, finely chopped
2 green chilies, finely chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Salt to taste
2 tablespoons chopped fresh coriander leaves
Ghee or butter for cooking
For serving:
Mint chutney
Tamarind chutney
Sliced onions
Instructions:
In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and sugar. Mix well.
Add yogurt and milk to the dry ingredients. Knead the mixture into a soft dough. Add more milk if needed.
Drizzle oil over the dough and knead again until the dough becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 1 hour.
Meanwhile, prepare the masala filling. In a bowl, combine the mashed potatoes, chopped onion, green chilies, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, salt, and fresh coriander leaves. Mix everything well.
After the resting time, divide the dough into small lemon-sized balls. Take one dough ball and flatten it slightly.
Place a spoonful of the masala filling in the center of the flattened dough. Gather the edges of the dough and seal it properly, ensuring the filling is completely enclosed.
Dust the filled dough ball with flour and roll it out gently into a round kulcha of about 5-6 inches in diameter.
Heat a tawa or griddle over medium heat. Place the rolled kulcha on the tawa and cook for a minute or until small bubbles appear on the surface.
Flip the kulcha and cook the other side for another minute. Apply ghee or butter on the cooked side and flip it again.
Cook the ghee/butter side until golden brown spots appear. Apply ghee/butter on the other side as well and cook until both sides are nicely browned.
Remove the kulcha from the tawa and repeat the process with the remaining dough balls and masala filling.
Serve the masala kulchas hot with mint chutney, tamarind chutney, and sliced onions.

1/2 चम्मच लाल मिर्च पाउडर
1/2 चम्मच हल्दी पाउडर
1/2 चम्मच जीरा पाउडर
1/2 चम्मच धनिया पाउडर
नमक स्वादानुसार
2 बड़े चम्मच कटा हुआ ताजा धनिया पत्ती
तलने के लिए घी या मक्खन
परोसने के लिए:
पुदीना चटनी
इमली चटनी
कटे हुए प्याज
निर्देश:
एक मिश्रण कटोरे में मैदा, बेकिंग पाउडर, बेकिंग सोडा, नमक, और चीनी मिलाएं। अच्छे से मिला लें।
मिश्रण में दही और दूध डालें। इसे एक मुलायम आटा बनाने के लिए घोल बना लें। आवश्यक हो तो दूध जोड़ें।
