How to make mutton Rezala Recipe English


 Mutton rezala is a delicious and aromatic Indian dish made with tender mutton (goat meat) cooked in a rich and creamy gravy. Here's a recipe to guide you through the process of making mutton rezala:


Ingredients:


500 grams mutton, cut into pieces

2 tablespoons ghee (clarified butter) or oil

2 onions, finely sliced

1 teaspoon ginger paste

1 teaspoon garlic paste

1 cup yogurt, whisked

1 cup milk

1 teaspoon white pepper powder

1 teaspoon ground nutmeg

1 teaspoon ground mace

1 teaspoon ground cardamom

1 teaspoon ground cinnamon

1 teaspoon ground cloves

Salt to taste

Chopped coriander leaves for garnish

For the marinade:


1/2 cup yogurt

1 tablespoon ginger paste

1 tablespoon garlic paste

1 teaspoon white pepper powder

Salt to taste

Instructions:


In a bowl, mix the ingredients for the marinade: yogurt, ginger paste, garlic paste, white pepper powder, and salt. Add the mutton pieces to the marinade and coat them well. Allow the mutton to marinate for at least 1 hour, or you can refrigerate it overnight for better flavor.


Heat ghee or oil in a deep, heavy-bottomed pan over medium heat. Add the sliced onions and sauté until they turn golden brown.


Add the ginger paste and garlic paste to the pan and cook for a minute until the raw smell disappears.


Add the marinated mutton to the pan and cook on high heat for a few minutes until it gets browned on all sides.


Reduce the heat to low and add the whisked yogurt to the pan. Stir well to combine the yogurt with the spices and coat the mutton evenly.


Add the white pepper powder, ground nutmeg, ground mace, ground cardamom, ground cinnamon, ground cloves, and salt. Mix everything together.


Pour in the milk and give it a stir. Cover the pan with a lid and simmer on low heat for about 1 to 1.5 hours, or until the mutton is tender and the flavors are well blended. You may need to add a little water if the gravy becomes too thick.


Once the mutton is cooked, check for seasoning and adjust salt and spices if needed. Cook for an additional 5-10 minutes to allow the flavors to meld together.


Garnish the mutton rezala with chopped coriander leaves.
