Ingredients:
- 3-4 medium-sized potatoes (peeled and cut into finger-like shape)
- 3 tablespoons cornflour
- 2 tablespoons oil (for frying)
- 2 tablespoons oil (for stir-frying)
- 1 red bell pepper (diced into small cubes)
- 1 green bell pepper (diced into small cubes)
- 3-4 green chillies (sliced diagonally)
- 3-4 garlic cloves (minced)
- 1/4 cup honey
- 1 tablespoon soy sauce
- 1 tablespoon chilli sauce
- Salt and pepper to taste
- Spring onions (chopped, for garnishing)
Instructions:
1. In a bowl, mix together cornflour, salt, pepper and enough water to make a smooth batter.
2. Dip the potato fingers into the batter and then deep fry them until crispy and golden brown.
3. Place the fried potatoes on a paper towel to remove any excess oil.
4. In a pan, heat 2 tablespoons of oil and saute garlic until aromatic.
5. Add the diced bell peppers and sliced green chillies and stir-fry for 2-3 minutes.
6. Combine honey, soy sauce and chilli sauce in a separate bowl and mix well.
7. Add the freshly prepared sauce to the pepper and chillies mixture and cook for 1-2 minutes until the sauce thickens.
