Here's a recipe for Chicken Tikka Kulcha Kebabs:


Ingredients:


For Chicken Tikka:


500 grams leg boneless chicken, cut into cubes

1 cup plain yogurt

2 tablespoons ginger-garlic paste

2 tablespoons tikka masala powder

1 tablespoon lemon juice

Salt to taste

2 tablespoons oil

Skewers for grilling

For Kulchas:


2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup yogurt

2 tablespoons oil

1/2 teaspoon salt

Water, as needed

Butter or ghee, for brushing

For Serving:


Mint chutney

Onion rings

Lemon wedges

Instructions:


In a large bowl, combine yogurt, ginger-garlic paste, tikka masala powder, lemon juice, salt, and oil to make the marinade for the chicken tikka. Add the chicken cubes and mix well to coat them evenly. Marinate for at least 1 hour, or preferably overnight in the refrigerator.


Soak the skewers in water for about 30 minutes to prevent them from burning during grilling.


Preheat your grill or oven to medium-high heat.


Thread the marinated chicken onto the skewers, leaving some space between each piece. Grill the chicken tikka skewers for about 12-15 minutes, turning them occasionally until the chicken is cooked through and has a nice char on the outside. Alternatively, you can bake them in a preheated oven at 425°F (220°C) for 15-20 minutes or until cooked.


While the chicken is grilling, prepare the kulchas. In a mixing bowl, combine all-purpose flour, baking powder, baking soda, yogurt, oil, and salt. Mix well to form a soft dough. Add water gradually and knead until the dough is smooth and elastic. Cover the dough and let it rest for about 30 minutes.


Divide the dough into small balls and roll each ball into a flatbread (kulcha) of approximately 1/4 inch thickness.


Heat a griddle or skillet over medium heat. Cook the kulchas on the griddle until golden brown spots appear on both sides. Brush them with butter or ghee while cooking.


Once the chicken tikka and kulchas are ready, remove the chicken from the skewers and place them on a serving plate.


Serve the chicken tikka with warm kulchas, mint chutney, onion rings, and lemon wedges.
