2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 tablespoon black peppercorns
4-5 green cardamom pods
2-3 black cardamom pods
1-inch cinnamon stick
4-5 cloves
1 teaspoon black cumin seeds (shah jeera)
1 teaspoon turmeric powder
1 teaspoon red chili powder
1/2 teaspoon nutmeg powder
1/2 teaspoon mace powder
1/2 teaspoon dried fenugreek leaves (kasuri methi)
Salt to taste
Instructions:

Heat a pan over medium heat and dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, green cardamom pods, black cardamom pods, cinnamon stick, and cloves for a few minutes until fragrant. Stir continuously to prevent burning.
Remove the roasted spices from the pan and let them cool for a few minutes.
Once cooled, transfer the spices to a spice grinder or mortar and pestle and grind them into a fine powder.
In a bowl, combine the ground spice mixture with black cumin seeds, turmeric powder, red chili powder, nutmeg powder, mace powder, dried fenugreek leaves, and salt. Mix well to ensure even distribution of the spices.
Your homemade biryani masala is ready to use. Store it in an airtight container in a cool, dry place for future use.
